Never combine a large amount of fat with a protein. Large amounts of fat, especially refined fats, delay the secretion of hydrochloric acid needed to digest the protein.

Cooking Tips: If you need a small amount of oil in your cooking to keep food from sticking to the pan, we recommend coconut oil, olive oil, butter, or ghee.
You also might try using broth or even water to avoid the sticking. Do not eat hydrogenated fats, such as margarine. The hydrogenation process changes the character of the oils used, making them poisonous. While cheese is not on stage one of The Diet, nuts and seeds are … as long as you can digest them. If and when you do eat them, combine dairy foods with acidic fruits,9 seeds and nuts, and non-starchy vegetables especially raw, leafy greens.
For example, create a milk kefir salad dressing using lemon juice, avocado, Hawaiian sea salt, and fresh herbs and toss into mixed field greens. You could also sprinkle in some soaked and sprouted pumpkin seeds.
They are mostly starch, with some protein, so you can see why they are difficult to digest and cause gas. When your digestive tract becomes stronger, you may be able to introduce them and combine them safely with non-starchy green vegetables and ocean vegetables. Soybeans should be fermented. Miso, natto, and wheat-free low-sodium tamari are recommended in stage two of The Diet but can even be eaten by many in stage one.

Just allow time for a meal that contains protein to digest about three hours before switching to a meal with grain-like seeds. Water Drink water alone. Ideally, drink at least eight glasses per day, but not with meals, since it dilutes your digestive enzymes. When you get up in the morning, drink two ounce glasses of water almost immediately to hydrate your body.
At other times, drink no closer than 10 to 15 minutes before a meal, and then wait again an hour or longer after you eat. Drink water at room or body temperature—ice-cold water shocks the system too much. Try to have at least half your daily water intake by mid-morning; it really revitalizes your system. Even when you take these actions, you will be following the principle of step by step. And in your inner world the colonies of friendly bacteria will be increasing in a step-by-step manner.

When you have a setback—an old symptom or reaction—take only the next step that allows you to get back on track. As you start The Diet, some things may not be clear, but as you become stronger each day, step by step, your understanding and clarity increase. You will be pleasantly surprised by the variety of foods you can eat on The Diet. Some of them may be new to you, so you will have the joy of discovering new tastes and textures. Some like the ocean vegetables are different enough that it may take some time to acquire a taste for them.
But it will be worth it. Many of the foods have healing qualities, so you will especially want to concentrate on them. And by staying on The Diet, you will feel so much better in such a short time that you will soon be eagerly trying new recipes using its foods.
Because of individual sensitivities, you may find that one or two of the foods on the B. There are plenty of other foods that you can enjoy. This is especially important during periods of cleansing. If you are naturally slim, you may even go below your average weight. In time, when your body starts rebuilding, you will regain to your ideal weight, the weight at which your body functions best. They do not feed fungus. These foods are acid-forming and cause contraction.
Combining them with raw cultured vegetables is a must. Animal proteins create toxic by-products in the intestines. The microflora in the cultured vegetables turn these toxins back into useful amino acids. They also protect against parasites. If you are willing to eat your animal protein rare or even raw e.
If raw, freeze for at least 48 hours to destroy parasites, then defrost. Buy animal-protein foods that are free from antibiotics and hormones. At first you need to eat more animal foods than you might like or be accustomed to.

When we wake up in the morning, our bodies are dehydrated and acidic. We need to hydrate and alkalize and create energy to start our day. Eggs can be too heavy and contracting. Still, their strongly contracting nature is grounding and energizing so they can be useful for those with very active mornings.
If you are physically active, they may be the perfect breakfast for you. They wake up the brain and help you focus better. Eggs can be eaten for dinner but are really too contracting and energizing for your last meal of the day. They also take longer to digest than a meal with a grain-like seed, such as quinoa, and your stomach may still be trying to digest them at bedtime. Most people sleep better on an empty stomach, so try to eat your last meal several hours before going to sleep. Then eat only the yolk.
The cooked egg white has less nutritional value. Contrary to popular belief, it is the egg yolk that is most healthy. Softly scrambling one whole egg plus two yolks in butter or ghee is another excellent preparation method.
Eggs are sorely misunderstood these days. Yes, they do have cholesterol, but this is an important fat. Eggs actively raise the level of HDL, which is the good cholesterol, and they have the most perfect protein components of any food. Today, even though we Americans have cut our egg consumption in half, there has not been a decline in heart disease.
If you have been an egg lover and have given them up, you can now enjoy them. Remember to combine them with lots of alkaline vegetables to balance their acidic nature. Raw cultured vegetables an excellent expansive food make an ideal balance with the contracting power of eggs.
These enzyme-rich vegetables greatly enhance digestion of protein. It is also very wise to use a digestive enzyme with HCl and pepsin, which begins digestion in your stomach, and then an enzyme with pancreatin to complete digestion in your small intestine.
Many people who test allergic to eggs on allergy tests are simply not digesting them properly. Undigested proteins become a toxin in your digestive tract. Menu Tip: Try a land- or ocean-vegetable omelette. Or serve your eggs poached or over easy on a bed of steamed greens. They greatly assist in the digestion of all foods, including proteins.
Pancreatic enzymes complete this digestion in the small intestine. Digestive enzymes are a must! Sprinkle it on your protein foods or cook with it. Other Protein Foods Protein Fats Nuts and seeds can be an excellent source of vegetarian protein, but for many people, they can be too difficult to digest. Because they are a very concentrated food, eat them in small quantities. Nuts and seeds are acidic, with the exception of almonds, which are alkaline. Soaking removes an enzyme inhibitor that makes them difficult to digest. Pureeing nuts and seeds after soaking and sprouting makes them much easier to digest.
To soak: Cover nuts or seeds with purified water in a glass or stainless-steel container overnight or for 12 hours. Drain and refrigerate. To sprout: First soak in a sprouting jar 8—12 hours, then drain. Then turn sprouting jar upside down in your dish drainer for 8 more hours, turning occasionally. The nuts or seeds can then be refrigerated in an airtight container, or use a dehydrator. Sprouting more than one day produces a bitter taste.
Popular seeds eaten on The Diet are flax, chia, sunflower, and pumpkin. Flax and chia seeds have a special mucilage-like compound that helps improve elimination. Each night pour hot water over a tablespoon of the seed of choice and let sit overnight.
In the morning, drink everything you see in the cup. Since nuts and seeds are protein fats, they can be eaten with acid fruits, other protein fats like avocado and milk kefir , and non-starchy, alkaline land and ocean vegetables. Grain-like Seeds The Diet allows four grain-like seeds that are gluten free and do not feed the yeast. You can enjoy millet, quinoa, amaranth, and buckwheat on The Diet. They may not be familiar to you, but they are readily available in health-food stores and some supermarkets.
The first three are alkaline-forming. Buckwheat is acid-forming, so cook it with a little bit of good-quality sea salt which is alkaline and lots of fresh herbs and vegetables to balance its acidity. All the B. Eating a grain-like entree for your last meal of the day is ideal, because they digest more quickly than animal foods and you will sleep better at night. The non-starchy vegetables see non-starchy vegetables form excellent combinations with just about every other food. They provide perfect balance to your protein or grain-like-seed meals. They are alkalizing, filling, and give you a sense of well-being and health.
You can eat non-starchy vegetables with organic, unrefined oil; butter; ghee; animal protein; eggs; grains; starchy vegetables like acorn squash and potatoes ; lemons; limes; and protein fats, including almonds and sunflower, caraway, flax, or pumpkin seeds. Leafy green vegetables, which grow above ground turnip greens, kale, collards, beet greens , are rich in chlorophyll and help cleanse the blood.
They also provide excellent sources of calcium and iron and should be included in every meal. Root vegetables, which grow underground carrots, onions, daikon, turnips , are more contracting in nature and provide strength and winter warmth.
The starchy vegetables, such as red skin new potatoes, water chestnuts, winter squash, artichokes, Jerusalem artichokes, and English peas, can be eaten as entrees and combined only with the four B.
Red skin potatoes are the only potatoes recommended on The Diet at first; feel free to eat the skins. Sweet corn is only mildly starchy when cooked; if eaten raw, it is a non-starchy vegetable. Fresh or frozen black-eyed peas and lima beans can be eaten if you are able to digest them. They are best digested when combined with non-starchy veggies. Arame is good either cooked or raw. You can add soaked then chopped arame, dulse, or wakame to your salads. Agar is a mild-tasting gelatin used to thicken aspics or puddings; it also helps eliminate constipation.
